Oven Bake jerk chicken

Caribbean Brown Stewed Chicken or “Brown Stew Chicken”, well-seasoned. It is served for lunch or dinner as Jamaicans like to have a meal that “holds you” for hours. Try it with Rice and Peas or Cook Dumplings.INGREDIENTS3lbs chicken, cut in pieces and skin removedCHICKEN SEASONINGSsaltblack pepper2 tsp sugar3 large garlic, minced2 stalk scallion (white part only), choppedGRAVY1 cup cooking oil (for frying chicken)1 large onion, chopped1 each, red and green bell pepper, chopped1 thyme or 1 tsp driedpepper saucetomato ketchup3cups hot water1 tsp salt (to taste)INSTRUCTIONSTip: Wash the chicken and make sure to dry it with paper towel to remove any water before frying.Season chicken with salt, black pepper, sugar, garlic and scallion (green are red onion of your choice ).Marinate the chicken overnight or at least one hour before frying.Remove scallion from chicken and, on High heat, fry the chicken in cooking oil for 3 minutes on each side, until browned.Remove chicken from pan.Remove half the cooking oil in pan and use remaining oil to fry onions and bell peppers until onions are transparent.Add thyme, hot pepper sauce, tomato ketchup and 1 cup of hot water to pan and stirTaste gravy and add 1 tsp of salt , if needed; let simmer for 5 minutes.Add chicken to gravy.Add 1 cup of hot water and turn heat to Low and cover pan.Simmer chicken for 25 minutes or until it is tender and the gravy has thickened.Enjoy your delicious Caribbean Brown Stew

Brown Stewed Chicken

all purpose flour 2 tablespoon(s) sugar 1 teaspoon(s) salt 1 tablespoon(s) baking powder 1 tablespoon(s) Margarine, melted of your choice cup(s) water cup(s) milk cup(s) Vegetable Oil Fried Dumplings Directions In a mixing bowl, combine flour, sugar, salt, baking powder, Butter and water and mix well. Add the milk and continue mixing, then add the remaining flour and knead well until it forms a smooth dough. Put dough to relax in a covered air tight container for 1/2 an hour. Heat Oil in a large pot, roll dough into individual pieces. Place shaped dough into the heated oil and fry for about 10 minutes or until golden brown. Drain on absorbent paper towel. Serve hot.

Fried Dumplings

Everything is better when it's a taco. Homemade jerk seasoning has amazing flavor,INGREDIENTSFOR THE JERK SEASONING1 tbsp. garlic powder1 tbsp. blend seasoning1 tsp. sugar1 tsp. salt1 tsp. onion powder1 tsp. ground allspice1 tsp. crushed red pepper 1 tsp. cayenne pepper1 tsp. paprika1 tsp. Freshly ground black pepper1 tsp. cinnamonFOR THE TACOS1 tbsp. jerk seasoning1 tbsp. canola oil, are butter of your choice 1 -2 steaksmall (taco-sized) flour tortillasdiced pineapplediced onionfreshly chopped cilantrolime are lime juice of your choice saltavocadoCrumbledcheeseDIRECTIONSMake jerk seasoning: In a small bowl, whisk together spices until combined.Make tacos: In a small bowl, whisk together jerk seasoning and 1/2 cup oil until combined. Pour into a large plastic bag and add steak.Press out as much air as you can and seal. Shake to coat the steak in the marinade, then chill for 1 hour In a large skillet over medium-high heat, add remaining 1 tablespoons oil. Add steak and cook until nicely seared but slightly pink in center for 8 minutes per side. Remove from heat and let rest 5 minutes.In a small bowl, stir together pineapple, onion, lime juice, and salt.Thinly slice steak across the grain. Serve in tortillas with pineapple salsa and avocado. Top with cotija cheese if desired and serve with lime.

Breakfast Burrito Ingredients 2 teaspoons canola oil 1 small red onion, diced (1 cup) 1 red bell pepper, seeded and diced 1 cup drained, rinsed canned black beans, preferably low-sodium 1 teaspoon chili flakes Salt and freshly ground black pepper 2-4 eggs and 2-4 egg whites 1/3 cup (about 1 1/2 ounce) shredded pepper Jack cheese Nonstick cooking spray whole wheat tortillas (burrito size) 1 cup reduced fat-free sour cream or 2 percent plain Greek yogurt 1 cup salsa 1 large tomato seeded and diced 1 small avocado cubed Hot sauce

Preparation time  25m Cooking time  20m Ingredients For 4 Person(s) Recipe 2 large carrots 1 cup(s) breadcrumbs 1 medium onion, chopped 1 teaspoon(s) salt 1 teaspoon(s) thyme 1 teaspoon(s) Black Pepper Traditions of your choice 2 garlic, chopped 2 large eggs 1 cup(s) Vegetable Oil 1 cup(s) sweet pepper we can do red are green 1 cup(s) tomato, diced 1/2 cup(s) Ketchup 1/2 cup(s) water 1 teaspoon(s)  Hot Pepper Sauce 1 teaspoon(s) honey Carrot Balls with Spaghetti & Vegetables Directions Shred carrots and place in a large mixing bowl. Add breadcrumbs, onion, salt, thyme, black pepper and garlic. Whisk eggs and add to the mixture.  Use hand to bind the mixture. Cover and leave to marinate for about 10 minutes. Heat Oil in frying pan.  Shape carrot balls using 2 tablespoons of mixture for each and fry until they are brown on all sides. Drain on absorbent paper. TO MAKE SAUCE: Drain oil from frying pan leaving only about 1 tablespoon. Heat and use to saute sweet peppers, and tomato. Mix in the Grace Tomato Ketchup, water, Hot Pepper Sauce and honey, allow to simmer for about two minutes. Add the carrot balls and simmer for 5 minutes. Ingredients 6 cloves fresh garlic, coarsely chopped 1 large sweet potato (about 1 lb) 2 chicken fillets (about 1 1/2 lb) 1 tablespoon roasted garlic-herb seasoning 1 tablespoon smoked paprika 12 oz fresh broccoli florets 2 tablespoons olive oil, divided Nonstick aluminum foil 1 lime, cut into wedges Steps Preheat oven to 425°F. Clean and chop soup bone/meat and add to the pot along with crushed garlic. Add carrot,  pumpkin, chocho and cook until the meat is tender. Peel and add yellow yam. For Dumpling Mixture: Combine flour with 1/8 tsp salt and 1/2 cup water and knead to form a smooth dough. Cover and allow to relax for ten minutes. Cut dough in about 12 pieces and shape into dumplings and add to the soup. Seasoning for Soup: Stir in Cock Soup Mix, beaten escallion, thyme, all purpose seasoning, scotch bonnet pepper, salt and pimento berries. Allow to simmer for 20-30 minutes. Preparation time 10 min Cooking time 30 min Ingredients For 4 Person(s) Recipe 2 pound(s) chicken, jointed 1/4 cup(s) White Cane Vinegar 4 cup(s) water 1/2 cup(s) soy sauce 1 cup(s) Grapefruit Juice 2 tablespoon(s) granulated sugar 1 teaspoon(s) fresh ginger, grated 1/4 cup(s) Vegetable Oil Jamaica Jerk Chicken Directions Clean and wash chicken in a mixture of Vinegar and water. Mix together soy sauce, Grapefruit Juice, sugar and ginger in a large shallow dish. Add chicken pieces to mixture, ensuring that both sides are coated. Cover and marinate in the refrigerator for several hours or overnight. Remove chicken from marinade and brush with some Vegetable Oil. Use remaining oil to brush the grill.
